It's always a treat to see out of town friends! I had the pleasure to spend time this week with a dear friend, Shirley Ross from Alabama. She was in town babysitting her Grandkids. It's about once a year that we get to see eachother. It's usually at a corporate event, so this was super great to get to have her join us for Mother's Day dinner yesterday. I love connecting with my Close to My Heart sisters. Thanks Shirley!!

Maggie

We have let our kids play with cameras for a while now and it's so great to go back and see things from their view. And then there is also the times when you find the silly things they do when you aren't looking! My youngest daughter Maggie did just that and took these great photos of herself! I especially love the ones towards the end where she is trying so hard to keep her eyes wide open!

SPRING

The colors of Spring are out and we are loving it. Today was another beautiful and warmer day in the Seattle area. My kids have enjoyed being outside all weekend! We haven't done that for over 5 months. It's so nice to know that the people who live around you are still alive! That is one thing that I don't know I will ever get used to. Around here in the winter time, everyone goes inside and doesn't come out. It's like they are all hybernating.

The Spring air also gets us moving and that means I get more done in the day! I will be posting this week all that I have been working on and can't wait to share with you!!

Retreat in Lake Chelan, WA

Twice a year I get customers together to go out of town for the weekend to get some scrapbooking, photo organizing, papercrafting, or whatever done! This last weekend we went to Lake Chelan and had a blast. We all came with something to accomplish and I think I can speak for everyone when I say we got more done that we had hoped! Molly completed 3 gift scrapbook albums, plus some cards. Amanda completed more layouts than she ever imagined she could in one weekend, Teresa organized all of her photos (2 large tubs) she had stored in her bedroom closet into photo books, Larissa completed all her train photos she had brought, plus she started on her next projects, and Tami finished her son's 9x9 baby album and started her first 12 x 12 album! I completed all of my layouts for my families trip to Disneyland in 2008 and finished pages for my girls 9x9 albums I started for them of all their vacations. Now I just need to go back and finish pages from our Disneyland trip in 2009!

Here are some photos from our trip. We love to go eat at Blueberry Hill restaurant at least once while we are there for brunch. They have the best breakfast if you are in Lake Chelan I highly recommend it!

Perfect Lemon Cupcakes

I just finished putting the cupcakes in the oven and they smell divine! This is the ultimate Lemon cupcake and it's so pretty just in time for spring. The recipe is below and I doubled it to get at least 30 cupcakes. I got 36 cupcakes plus a loaf pan full of cake! I know the ladies at my retreat this weekend will be loving that. Hope you enjoy!

Perfect Lemon Cupcakes

Cake:

1 package lemon cake mix

1 C sour cream

3/4 C water

3/4 C oil

4 eggs

1 small package lemon instant pudding

Mix dry ingredients. Add wet ingredients. Mix with electric mixer on medium speed for about two minutes. Use a strong mixer, this batter is thick. For cupcakes, bake them at 350 degrees for 20 minutes (I was able to get 24 very full cupcakes from the recipe). For regular cake, pour into a greased 9×11 pan or two round pans. Bake at 350 degrees for 25-30 minutes. Don’t over bake or the cake will be too dry! The toothpick test works to check to see if they’re done.

The original recipe said that the cupcakes will fall after they come out of the oven, but this is normal and to just fill up the indentation with more frosting. I didn’t have this problem at all!

Lemon Buttercream Frosting:

1 cup (2 sticks) butter, very soft

6-8 C powdered sugar

1/2 C fresh lemon juice

1 teaspoon grated lemon zest

Place the butter in a large mixing bowl. Add 4 cups of sugar, then the juice and the zest. Beat until smooth and creamy. Gradually add the remaining sugar, 1 cup at a time, until icing is thick enough to be of good spreading consistency (I added 6 cups total). Use and store at room temperature. (Don’t refrigerate and it will last in a covered container for about three days.)

Garnish with berries, if desired right before serving.

First Video Tutorial

I love that Close to My Heart has brought me together with some amazing friends and Jeanette Lynton! Every event I go to I get my picture taken with her and it makes me feel like a groupie! We live for this stuff and for Jeanette! I guess it's just our way of showing our support. This is the most recent picture from Portland Regional Celebration last weekend. Next to me is Carol Harris and we are team mates. Cindy Denning to the far left is our upline. I believe that you could put both Jeanette and Cindy on pedestals! (and Carol too!!) Because of Cindy I get to do what I love and what I'm passionate about. I love all these fabulous ladies and I'm so proud to be a part of this with them.

In the next few days I will post pics of each of the creations we made at Regionals!
